Cafe Rio Rice

The recipe I found called for minute rice but I just used normal rice with the amount of water that the rice called for. It also is cooked by putting it in the water and bringing to a boil (rather than after the water boils). It turned out perfectly so feel alter the recipe based on the rice that you use.

Ingredients
3 cups Minute rice
3 cups water
4 teaspoons chicken bouillon
4 garlic cloves, minced
1/2 bunch cilantro
1 can green chilies
1/2 onion

Chop cilantro, green chiles and onion together in a food processor. Bring water to a boil and add all ingredients, simmer covered 30 minutes.

I love to do this rice with basmati rice! Mm-mm! If you do use basmati, do everything the same including 3 cups of water, but use only 2 cups of basmati,

What if you just have chicken buillion cubes and not the jar of chicken buillion? How many cubes would you use?

Erika - I would use 4 cubes. In fact, I've used it before with cubes instead of buillion and it turns out great - just make sure that the cubes are completely dissovled.
